Wow! And we complain about the greed, chicanery, corruption, favoritism, arrogance and abuses in our modern government and society! It seems that the freedoms we Americans love to extol include in good proportion freedom to lie, cheat, steal, and take advantage of the weak, ignorant and underprivileged. An eye opener for anyone with romantic delusions about the nobility of our culture. Yet in spite of it all, America gained a transportation system that still serves fairly well. It's lengthy but well written and easy to read. The lessons it teaches unfortunately still apply today and to many other industries as well. Hopefully some high schools and colleges will include this book in reading lists for their students.

An interesting book about the Big Four in California and the impact they had on the building of the transcontinental railroad and on the development of California as a state. Sometimes the text was a bit wooden and a bit of in depth analysis was lacking, but overall, it was an interesting read.

This is a very interesting story about the unneeded westward expansion of the railroads. There was much more involvement by the government than I had realized in the promotion of the railroads. If it had not been for the government financing the railroads growth would have been at a much slower pace. There was an incredible amount of greed and corruption involved.This was a well-researched and well-written book about that historical period of westward expansion.

There was a lot of data about the westward expansion of the railroads and the country. I did not find it particularly readable. I wish my father was still alive so that I could ask him some questions. He was very knowledgeable about trains.

Wow! Such a beautiful, high-quality Book and the recipes are amazing! So far I have made five of her recipes (in as many days) and every one was incredibly delicious! My husband is so impressed, declaring this cookbook a winner. I have (and love and use) all 10 of Ina Garten’s Barefoot Contessa cookbooks, but I have to say this one beats them all! A must-have for every discerning home chef!Blueberry Scones with Tart Lemon Glaze: Easy and delicious! The tart lemon glaze with lemon zest takes this one over the top! Came out perfect the first time!Orange Gazpacho with Basil: we love gazpacho and have been making it for years from three favorite recipes. This is very easy and the fresh-squeezed orange juice is a refreshing twist! Love! Will definitely make this again.Chocolate Croissant Bread Pudding: this took about 5 minutes to throw together before refrigerating overnight. After 45 minutes of baking...Wow, absolutely delicious! Perfect texture, perfect balance of flavors. Raves all around!Herbed roasted potatoes: adding garlic cloves halfway through cooking is ingenious. This was quick and easy to throw together and everyone devoured them! More flavorful than The Barefoot Contessa’s similar herbed potatoes, cooked to perfection, and there were no leftovers!Can’t wait to try all the rest!

This is the first printed cookbook I've purchased in a long time. I usually find recipes online which is how I found this author's food blog in the first place, but this feels like one of those timeless cookbooks your parents had with the heavyweight pages and fantastic color photography.This is a chef who knows how to put together crowd-pleasing meals with a reasonable amount of prep time, and ingredients that should be easy to find anywhere. I'm already familiar with some of these recipes from her blog, and I assume there are some new ones in here as well. Her Peruvian Chicken with Green Sauce recipe is a foolproof masterpiece that has become one of my favorite things to cook. Her website has become one of my go-to places for meal ideas, which is really saying something considering how saturated the web is with recipes. The same can probably be said for cookbooks too, but I have a feeling this will end up being one of the few on my shelf that I reach for on a regular basis. I'll be buying a couple more copies as gifts and would recommend this cookbook to anyone, regardless of cooking skill level.

Once Upon a Chef has been my go to for recipes (Jenn’s blog). Every single recipe has been excellent. I use her when I’m plannig a dinner party, taking food to people in need, what-to-do-for dinner nights, and special occasions. Most are simple and a few are a step up. Making her amazing chicken Marsala made me feel like I had reached the next level in my cooking. Try out some of her recipes on her blog and you will naturally want to get her book. I love that I can pick whatever she’s got with the confidence it’ll turn out well.

Having followed Jennifer Segal's blog for quite awhile, I decided to pre-order her first cookbook. As with the blog, the recipes are great: easy to follow, no exotic, hard-to-find ingredients and guaranteed to be good. Her Black Bean Salad with Corn, Red Peppers and Avocado in a Lime-Cilantro Vinaigrette recipe, online at Once Upon A Chef, is fabulous and always a favorite, so I can't wait to try a different, cookbook version, Black Bean & Corn Salad with Chipotle Honey Vinaigrette. Her Cauliflower Puree with Thyme is so good and super easy to prepare. The Pasta e Fagioli recipe is also spot on. I enjoy the Sourcing Savvy, Pro Tip and Heads Up side comments but find them and them a bit difficult to read, due to the light print color and font. Everything else is wonderful.

This is the first cook book in years that I feel will never make it to my bookshelf. You all know what can happen to cookbooks in bookshelves...they often remain there, only to be forgotten. Well not this time. It arrived yesterday, and I've already made Jenn's Smoked Salmon Spread to accompany bone dry dry martini's last night. A stunner spread, albeit a breeze to make. Jenn has the keen eye of understanding ingredients and flavors that invite you in, like I have not experienced in ages. I know my way around the kitchen since single digit age, including being a private cooking teacher. I never want to "know it all", and in 2018 I have found my muse. No Churn Cheesecake Ice cream with graham crumble? A vastly upgraded Caprese? Warm Carmelized Onion and Gruyere Dip? Who thinks this stuff up??? My list of "make me" has started, and whoever gets this cookbook after hopefully a lot of remaining years, will no doubt be seeing my own handwriting/notes within....can't believe I just admitted that. Oh....that honey mustard sauce recipe will rock my chicken loving world, big time. Don't tell, but I'm serving this with my own crispy chicken wings tomorrow night, although I will get around to the books fried chicken tenders in time.

I received Jennifer Segal's new cookbook from Amazon yesterday. I am a loyal follower of her weekly Once Upon a Chef blog which has been a source of many wonderful recipes, ideas and useful information for the past couple of years. The book reflects the same quality, clarity and enthusiasm one finds on the blog. I didn't want to write my review until I had at least tried one on the recipes, so last evening I prepared pan-seared halibut with cherry tomatoes and basil. It was simply delicious. Like all of her recipes, the instructions are very clear and easy to follow. Accompanying commentary text is useful and avoids the lengthy bloviation one finds in too many cookbooks. Recipes are accompanied by both sourcing information and professional tips which, as an amateur, I find particularly helpful. Finally, the book is beautifully designed and reflects what so many cookbooks seem to lack, great editing and thorough proofreading. I know this cookbook will get frequent use in my kitchen.

The one I bought had some markings but they were helpful markings! Also it is in large print so it's great!

For me, there are three grand French composers who were "from the moon," as I put it, complimentarily. First was Berlioz, whose music sounds almost un-related to the music around it. Most recent is Messiaën, who also sound unlike anything else.In between was Debussy, also "from the moon." This set of orchestral scores allows any interested student of music to learn how and why Debussy achieved this exalted lunar status.

Clear, large print and high quality paper.

Excellent product. Arrived dinged, as Amazon's shipping for large books is not very protective.

It is great. The only thing is I wish a list of instrumentation on a separate page for each piece would help. The score is as condensed as possible.

I bought an Instant Pot without a clue how to use it. This book is fantastic! So helpful! Made the Cajun chicken and green beans last night, and even my son, who's super picky, ate it up! I'm really excited about trying the ratatouille as well. The recipes are easy to follow, as far as I can tell, and the next time we have a party, I'll be able to make a ton of snacks and appetizers quickly. Highly recommend!

I ordered 2 Insta-Pot cookbooks by different authors. I noticed that the recipes seemed familiar. I checked further and found this book is an exact plagiarization of a cookbook published the day before by Bev Johnson. The recipes have the same ingredients, directions and the same names. Don’t buy this cookbook!

I love this cookbook because it's so easy to follow, and there's a ton of healthy recipes for basically every taste. The nutritional value of each meal is provided, which is super helpful to anyone who's counting calories or on a weight loss journey like myself. Also, there's an entire section on the Instant Pot itself and how to use it to get the best results.A must-have for anyone who owns or is thinking of buying an instant pot.

so far not very impressed with this cook book. The recipes seem very basic and bland which would be fine if adding your own spices if needed. There are a lot of meat recipes. I haven’t tried any yet but I am tonight so I will update my review as needed. Some of the recipes aren’t fully written out or missing steps it seems like it will say what to add to sauté etc and then to pressure cook but it will miss the step in putting a main ingredient. With common sense you would be able to figure it out though. No pictures about 3 recipes per page.

Recipes had me drooling. Easy step by step instructions with sectioned tables of contents. No pictures but pictures can be deceiving. Recommend.

I wanted an Instant Pot to be able to cook real food during busy times rather than being tempted by pre-packaged or take out food. A majority of the recipes that I have seen from other source have ingredients like cans of soup or dry mixes that I would never use. Other books also have so many exotic ingredients that most home cooks don't have on hand. This book has so many recipes that use real food and ingredients that I either already have on hand or would also use for multiple recipes. There is nothing more frustrating than buying a bunch of spices that will only be used for one recipe that you may never make again. The book is organized in a way to easily find what you are interested in cooking.

Kindergarten-Grade 3-Evolution is a ticklish topic. It seems like a great idea: tell the story of the evolution of all living things by showing that "all of us are part of an old, old family" and that we can trace our roots back to "tiny round cells in the deep dark sea." But it's not that easy to explain the minutiae of DNA and the sweep of Earth's geology and biology to a young audience. This oversize picture book, with chatty text and elaborate, packed, brightly colored, double-page illustrations, may look child friendly, but it's sometimes confusing. Readers are told that the time line, which appears in tiny print, isn't drawn to scale, but it certainly looks as if microscopic bacteria haven't been around much longer than primates. The second part of the book works best, tracing the emergence of warm-blooded creatures right up to the excitement of walking upright. This is best suited to classroom use, where adults can turn to helpful notes at the back to discuss our connections with those first tiny round cells and how we've changed since then. The book itself has fairly short sentences and does for the most part only present a vague introduction to the subject of evolution. It is by no means the only thing a child should learn on the subject.It tells about how "we" have changed a lot over a long period of time (millions of years in the third pair of pages).It's fairly basic and describes what each level of our evolution added to make what we are now as humans.That's almost the entirety of the book.The last few pages go into depth. I know that those pages will be a little too much for my 5-year old, but it's great to use over time with this book.Those last pages explain in detail what is meant in the book when it talks about what we inherited from these distant ancestors.They also give us a timeline to show it all to scale.Generally those last pages are probably something you might want to go into when the concept is a little bit more familiar, but having them around is a great thing nonetheless.

My 6 year old is getting interested in evolution and where things came from, so I wanted to get a few books that laid a good foundation without being too dry. This is a great option - gorgeous illustrations and a great amount of information, but not too simple or dumbed down.

It is important to me to expose my children to science and all that it tells us about our origins. A family member of mine wants to instill creationism in them and this is book is part of my attempt to have an impact on their understanding of life as a whole. That is my right as a parent and I'm grateful for books like these that help me do that. The book goes into greater detail in the back in case they want to know more but doesn't get bogged down in the text with too much information which makes it flow as a story. I love it.

I was looking for a book that would help my son (5 yrs) better understand what I believe about science and evolution as oposed to what his father believes (the classic Christian creation story). I needed something more than just telling him that I don't believe god created people and that's that. So I went searching. And this was my first hit, my first purchase, and I am SO happy with it.We just received our package yesterday and my son and I sat and read the book. He loved it. Like another reviewer said, it is very hard for him to grasp millions of years, but I found that just explaining to him in terms of a "long time ago" a "long, long time ago" and a "long, long, long time ago" helped him get the basic idea. He asked questions, and made observations, and was fascinated by the pictures.This book is just the start in educated him on science, but it is a good one. I've recommended it to all my similarly perplexed friends for their children.

I love this book, my kids always have so many questions about life evolved and it's hard to describe in ways their minds can absorb. This book really pulls it down to an easier to grasp concept. They love this book, and i could see the dots connecting as we read it. And the beautiful illustration doesn't hurt, either!

The title is misleading, as the presentation is largely a linear presentation of human ancestors. All the same, this may be the best book on the subject for young children.

While the story is a little amateur, my kid loves the book. As we read it she wants to pick out which thing she is. From the single cells to the creatures she identifies which she is and which is mommy and daddy. While My kid loves it, I really wish someone wrote it better because frankly after reading it every night for a few months, I have picked out everything that seems stupid that the writer should have done better...but then again...maybe its just me venting because I read it every damn night...lol.

I ordered a “used- good” copy and it was really more like new! I was very impressed with the condition of the book. The illustrations are beautiful and the words simple enough to engage my 4 year old. This is our first book for our child giving an explanation for how life began on earth. I do believe that perhaps something that rhymed would be better for his age group but it’s definitely a great start to what should be a collection of books on the subject. I enjoyed it.

This is a pretty good book. However, there are a few flaws that made it NOT suitable as a standalone guide for a beginner.The biggest issues I had with the book were that it:1. doesn't always define or explain what something is before talking about it, leaving beginners confused. Explanations will then be found LATER in the book, which is strange. It's as if they didn't have this proofread by a beginner, but only by photographers who already knew all this information, so it didn't occur to any of them that you need to explain what a word or term means/indicates before using it extensively, not AFTER using it extensively.For example: On pages 102-103, focal lengths are discussed. The differences between wide-angle focal length lenses, standard focal length lenses, telephoto focal length lenses, and macro focal length lenses are compared. He goes into when a photographer would want to use each of these 4 lenses, and their differences. The author also briefly talks about prime lenses, explaining that they have a "fixed focal length." This is all great, except that this information isn't something I can fully incorporate and understand until I know what focal length means. Sure, I could memorize all these facts, like that a wide-angle focal length lens is great for x, y, and z situations, but why would you want to do that when it's intuitive which one you should use if you understood what focal length actually was? The page following these 2 pages, page 104, is titled "What is focal length?"That's just backwards. After struggling to fully grasp everything on page 102-103, I gave up, and turned the page, relieved but also exasperated to see that the author did define focal length... after telling us all this other information about it. After reading that, the previous pages about when you should use different focal lengths was obvious, and became something you definitely wouldn't have to memorize if you remembered learning about lenses and light from physics class.2. Some things were ambiguous - even after reading it numerous times.This was probably one of the more aggravating issues for me. I would think that I understood what the author was trying to say, but I couldn't be sure because the explanation was ambiguous or lacking somehow. I'd have to resort to another photography book or to googling. I should also say, I watched a full craft photography course, and about 1/3 of a photography 101 course on Lynda.com BEFORE reading this book, so I was a bit more prepared than an "actual" beginner - despite this, I still found this book rather difficult, and I don't consider myself a stupid person. Again, it's like they didn't have the book looked at by a complete beginner to photography before publishing it.I've been reading this book starting from page 1. I'm nearly done with it (on page 142 at the moment) but I already have a list of about 10+ things that just weren't clear (which is not great.) Some of these were very quickly resolved by glancing at other photography books for beginners that explained it much more simply, and concisely, which was a surprise to me because those books had a lower overall rating on Amazon compared to this one. Referring to my camera's manual sometimes helped too, but the whole point of getting a photography book for beginners was so I wouldn't have to read something as dry and overwhelming (in amount of information) as the manual.Example:One thing I'm still trying to figure out is about automatic exposure bracketing on page 82.The author mentions that automatic exposure bracketing is a solution to the problem of balancing how long it takes to asses a shot's histogram to get the right exposure, and how long you have to capture a photo a potentially fleeting moment. Then he launches into how to use automatic exposure bracketing (AEB) What AEB actually is is isn't fully explained. In his instructions on how to use AEB, in the very last step - step 6 - he tells you what AEB does (it takes multiple shots at different exposures.) Okay, as a beginner who doesn't know what AEB is (because this beginner's guide isn't defining terms that a beginner doesn't know) it's ambiguous what the author is trying to tell me. Am I supposed to look at those 3 shots and then figure out what the best exposure is? Probably not because the next thing on that page after the last step (and also the last thing on the 2 pages about AEB) he says that when they opened the images on the computer, they chose one of the shots they took. Okay, that left me wondering - if you don't have time to check a histogram to figure out what exposure you need before the moment passes, how in the world do you have enough time to upload photos from your camera to your computer, then pick one out? Especially when you're out in the field shooting. How often do you bring your computer? I concluded it must not be the case that that's what AEB is for, but not knowing what AEB is, I couldn't be sure, and frustratingly, you're not told what it is. I've yet to really figure out what it is (I figure I'll eventually get to it on one of my Lynda photography courses, or I'll look for an explanation on Youtube) but my guess is that it's a feature that allows you to take multiple photos in a variety of exposures, and you pick the best one. What confuses me is whether or not the author is implying that in situations like he proposed (where you don't have time to check the histogram), that you just have to use AEB and take 3 photos, meaning you'll eat through your memory card 3 times as fast and have 3 times less available space. I think if the author took steps to ensure that there was no ambiguity, or had an actual beginner proofread this page, frustrating situations like this wouldn't arise.This is just one of a few confusing things. Another is using gray cards, which the author tries to explain on page 74-75. In step 4 of how to use gray cards, the author states "Use the exposure scale [to assess exposure.]" This really left me puzzled. How? Does the camera tell me if it's overexposed or underexposed? Or is that assessment something I have to determine myself? And how would I do it? Is it by comparing the photo of the gray card to the actual gray card? WHAT IS A GRAY CARD? (Are you seeing a theme here? Hint: lack of clear definition of terms being used, yet again) Are gray cards standardized? Or can I use anything that has a uniform gray color? I don't have a gray card, otherwise I'd go out and try it on my computer, or I could spend time looking it up in other books or in other resources, but I really, really shouldn't have to after plopping down $20 for a book that's supposed to be for beginners. It's on my list of things in this book that confused me.tl;dr:Not a standalone guide. Because terms are used before they're defined, and because some things are ambiguous, a true beginner to photography may need to google what the author means, refer to another photography for beginners book, or ask a friend versed in photography. Had I known this beforehand, I'd have considered starting with another book.

This is a wonderful book for beginners and gives you the basics that you need to know in order to understand how to get the most out of your new DSLR. If you're a beginner that doesn't know what's the difference between focus, shutter speed, or aperture, then this book will help you tremendously on your way to figuring out how to use such settings to produce the picture that you want.After I was done reading the first 3/4 of the book, I felt like I had the necessary knowledge to not only get the pictures I wanted, but to troubleshoot any out-of-focus or improperly exposed images as well. The book didn't make me an expert (I imagine only time and practice will do that), but it has definitely given me confidence in making manual adjustments to my camera.I bought the camera specifically to take pictures during vacations and attached are some of the first photographs that I took with my DSLR.

Fantastic book! I got a new camera like many and didn't have a clue what to do with all its features. I didn't even know what aperture or shutter meant, generally speaking. This book is for the beginner. It reads in such a way that it reaches out to you and holds your attention. The Author is great at keeping clear and understandable. You can't go wrong with this book if you are truly interested in finding more out about the camera you don't often use.

I've done film photography since the 1970s and know a lot about the photographic principles and processes. In the digital era, I got lazy and had never really learned how to translate my pre-digital photo knowledge into setting up and using digital cameras effectively. I mostly stuck to Auto, I'm sad to say. Camera manuals are pathetic, so what I really wanted was to learn exactly how digital cameras do what they do, and learn to use my digital cameras' settings more creatively than you can do on automatic. As one example, Gatcum explains beautifully the differences between all the possible settings such as Auto vs. Program, and what the benefits and limitations are for each one. This is one example of a topic the limited and badly translated camera manuals are silent on. This book assumes limited photographic knowledge so it would be fine for photo newbies, but it's actually extremely well laid out with brief but useful explanations and really great illustrative photos that anyone could learn and benefit from. I got a lot of good ideas from the various subjects the book. Another good point is that the topics and descriptions are clear, precise, but not too wordy. Just enough to illustrate the subject well both in description and with visuals. I have recently bought several similar books and this one is my favorite and I learned what I wanted to learn. Very useful for those in my situation as well as for total beginners, and highly recommended.

My 12 year old niece has shown a keen interest in photography whenever I visit (I am an avid photographer) as well as an aptitude for using a DSLR. I only get to visit every few years so I wanted something that would help her to continue learning when I'm not there. The first 25% of this book sets the stage for why we in the West need to learn about the Quran and the manner in which willful ignorance regarding the Quran and Islam has became an increasing problem, especially in the US. When Wills comes to the Quran, he does a good job of drawing upon multiple sources from different schools of thought, from Patricia Crone and Oliver Roy, to The Study Quran: A New Translation and Commentary and Jonathan Brown to Leila Ahmed. Having drawn upon multiple sources and multiple translations of the Quran, Wills has developed some excellent insights into the Quran, as when he writes, "The Quran is an exercise in semiotics. God speaks a special language, in which mountains and winds and springs are syllables. Everything is a sign." (p. 84) His chapters on commerce in the Quran and Jihad are also very insightful. He does, however, seem to stumble a bit when he comes to women in the Quran, especially his treatment of verse 4:34, a place where many have stumbled before.Overall this book is a very good example of what can be achieved when Western intellectuals seek to honestly confront and grapple with their own ignorance regarding Islam and the Quran. Many conservatives from multiple sides will no doubt decry this book, and use some of his blatant errors, such as referring to the Prophet's wife Zaynab as Zayda, to cast the whole book in a negative light. But Wills has done an admirable job of reaching beyond his own comfort zone (the Western cannon and the Christian tradition) to examine material that is not so foreign as some would make it out to be.For non-Muslims, this is an excellent book to try to better understand the Quran, though as Wills recommends, one should go to The Study Quran: A New Translation and Commentary for deeper investigation, or perhaps to Ingrid Mattson's The Story of the Qur'an: Its History and Place in Muslim Life. Muslims who have already had some exposure to the Quran and wish to know more about their own tradition will not find much material here. They will, however, find it to be useful for understanding how to present Islam and the Quran to non-Muslims.My only major criticism would be the use of Abdal Haleem's translation for most citations. Though it is smooth in English, it has many minor inaccuracies which do lead to slight misinterpretations on Wills's part.

I enjoyed this — it was not exactly what I wanted but it was one of the better attempts to shed some light on the spiritual appeal of this book and Islam. So many books just go into all the wars and tribal factionalism and so leave one wondering how in the world such a mess of a religion could appeal to so many people. Other writings tend to mainly appeal to “the scholars” and essentially provide the same sorts of answers that Christian evangelicals tend to use to sell you on Christanity — appeals to the authority of the Bible or of some church teachings that could only persuade someone who is already persuaded. This still does not give a complete answer but it was a start. It also displays Wills’s gift for political writing, in his beginning section on the post 9/11 debacle which shows how the public's and especially the "neocons'" and Bush administration's lack of understanding of Islam and the Islamic world, coupled with their own greed and arrogance, led America into a costly and pointless military adventure from which we have yet to extricate ourselves.

I think every serious American, religious or not, ought to read Wills’ book. He expliainos the key ideas of Islam that most frighten or confuse Westerners, and he does so in clear, straightforward text in the easy to read prose of a Classics scholar. While he isis careful to attribute and document sources, and his references to the Qu’ran are precise and quoted from an authoritative translation, he is also quick to point out that he is not a Islamic scholar and that he doesn’t know Arabic, the sacred book’s language. These would ardnarily be major problems in a volume that sets out to explain Islam, but in this case, Wills’ candor and straightforwardness, his lucid prose and documentation, including citations of other Western and Arabic writers suffices to support his authority to write this book. He puts Shari’ah, Ji’had, women.’s rights, Islamic Chrisology, and a host of other ideas Westerners need clarification on in focus. The book is worth twice the price whether you.’re Christian, Jewish, Atheist or don’t give a damn about religion. From Us!

Part 1 of my Kindle edition (28% of the entire ebook) needs a radical edit. The author needs to set the scene, but he overdoes the minutiae of the wars in Iraq and Afghanistan, with his rather strident arguments against those wars, plus lengthy quotes from President Bush and other key US figures involved in the decision to go to war, its planning and execution. Far too much padding.The background is important, but not worth filling 28% of the book. Any reasonably well-informed reader who is interested in a book like this would probably know the background to the wars cited, and would have well-formed opinions about them.Similarly the final sections on feminism and female clothing in Islam need editing.That's the main reason I gave only 3 stars for this book. Otherwise, it was very helpful to me.I have read the Qur'an (in English translation), and like the author on his first reading of it, I found it almost impossible to get to grips with. So I welcome this book because it has clarified my thinking a lot.It gave me a better understanding of why some Muslims reject mainstream Christianity as a polytheistic faith (3 Gods in one - Father, Son and Holy Ghost). I also have a clearer idea of what the Qur'an actually says about jihad (zeal, not violent attacks on non-believers), and sharia (the right path, not necessarily cutting off hands). The author gives excellent treatments of these topics.While the book is welcome and much-needed, I regret that it may not be read by many of those who really need to do so.
